Château Yvonne (Saumur)

This magnificent château on the Parnay terroirs was for a time the playground of Françoise Foucault (Clos Rougeard). For over 15 years, the very talented Mathieu Vallée has been cultivating all the vines organically. In the cellar, he presses the grapes slowly and gently to produce delicate, infused wines. The wines are aged in non-new barrels in troglodyte cellars to allow the Chenin Blanc and Cabernet Franc to express themselves. Never before have the wines been so refined and fruity.
